—-Before we went to bed last night, I told husband that maybe we can start working on our future vegetable garden, we thought that today might be a good day, sadly, mother nature have a different plan and that is to let the rain pour all day and then snow in the afternoon!, even Patrick was upset because he’s already looking forward for an afternoon at the playground but since we can’t do nothing about it, he opt to play with psp while watching NASCAR, while  I decided to cooked my favorite Pancit Bihon (Rice Noodles).  Back in the Philippines, we only cook this kind of food for a special occasion, especially birthdays, and so the boys, they got used to that Pinoy culture, when we came here and I have to cook it sometimes to satisfied my cravings, my youngest boy,God bless his heart, the minute he saw me cooking, he’ll asked me immediately who’s birthday is it   :mrgreen:  Anyway, back to my Pancit, after years of trying to perfect it,I think I’m getting there, because today, i got the perfect taste (at least for me) and also just right amount of garnish. Whenever I cooked this before, either it is too salty, I put too much veggies  and you can’t taste the noodles anymore, the noodles are still half-cooked, or just look pale, but today, I’m happy with the result :-)

Pancit Bihon (Rice Noodles) Ingredients:

  • 1 8 oz. pack pancit bihon (rice noodles)
  • 1 cooked chicken breast, shredded
  • 2 cups of chicken broth or 2 chicken bouillon cubes dissolved in 2 cups of water
  • 1/4 cabbage, sliced into strips
  • 1 onion, pealed and sliced
  • 3 cloves of garlic, crushed and minced
  • 1/3 cup scallions, cut into pieces
  • 1 carrot, sliced into strips
  • 2 tablespoons of cooking oil
  • 3/4 cup diced celery
  • 3 tablespoons soy sauce
  • Salt and pepper to taste
  • 5 pieces of calamansi or 1 lemon, sliced

Pancit Bihon Cooking Instructions:

  • Soak the pancit bihon noodles to soften for 10 minutes
  • Grease a large pan or wok with oil. Sauté garlic and onions.
  • Add the chicken broth, the shredded chicken breast and all the vegetables until cooked.
  • Mix in the pancit bihon noodles and add the soy sauce, cook for about 5 minutes or until the noodles are soft.
  • Salt and pepper to taste.
  • Serve hot with sliced lemon on the side.

You don’t need to go at  Asian Store to buy the rice noodles, because most International Isle at Wal-Mart have those.

    ooohh, thank you!  This looks like something I always used to order from an Asian noodle house that went out of business and I have never found anything else that tasted the same.  Can’t wait to make it!

    If you can believe it…Italy also has rice noodles. I am sooooo glad to have your recipe. I used to eat this when I was in the States and my Filipino friend used to make this for us at the office, as well as those wonderful rolls. Oh how I miss those!!!
